Salmon Salad

Ingredients

  • Marinade
    • 1/2 Cup Thrive® Culinary Algae Oil
    • 1/3 Cup orange juice
    • 1/4 Cup red wine vinegar
    • 1 Garlic clove
    • Salt & pepper to taste
  • Salad Dressing
    • 1/2 Cup Thrive® Culinary Algae Oil
    • 3 Tablespoons balsamic vinegar
    • 1 Garlic clove
    • Salt & pepper to taste
  • Salad
    • 1 Tablespoon Thrive® Culinary Algae Oil
    • 2 Fillets of salmon
    • Lettuce or greens of your choice
    • 1 Avocado
    • Slivered Almonds
    • 5 Baby tomatoes cut in half

Preparation

  1. Add all marinade ingredients to a bowl and whisk to combine or add to a blender/ninja and blend for 1 minute. Marinate salmon for 1 hour.
  2. Add all salad dressing ingredients to a bowl and whisk to combine or add to a blender/ninja and blend for 1 minute.
  3. Heat a cast iron skillet on medium high heat with oil. Cook the marinated salmon fillets 2-3 minutes on each side or until they brown and separate easily from the skillet.
  4. Top the chopped greens with tomatoes, avocados, almonds, salmon and dressing.
  5. Enjoy!
